Baked Chicken Drumsticks & Thighs

Ingredients
  • 3 or 4 Chicken Thighs, skin removed
  • 4 to 6 Chicken Drumsticks, skin partially removed
  • 1 Medium Yellow Onion, sliced
  • 1 Red Pepper, sliced
  • 1/2 cup Dry Vermouth or White Wine
  • Szeged Chicken Rub, or McCormick Grill Mates MONTREAL CHICKEN, or Adobo Con Pimienta seasoning
  • Garlic Salt
  • Extra Virgin Olive Oil
Preparation
  • Preheat oven to 400°F
  • Brush bottom of baking dish with Olive Oil
  • Arrange Chicken, Onions, and Peppers in baking dish
  • Sprinkle your Seasoning of choice and Garlic Salt on meat and vegetables
  • Pour Dry Vermouth into baking dish
  • Bake covered for 1 1/2 hours
  • Remove cover and continue to bake until Chicken is browned (15 to 30 minutes longer)
  • Serve
